My husband loves this bread and everyone I have made it for have enjoyed it. This receipe is in dedication to Fred's German Cousin as it is loosly based on a very nice German Christmas bread
1/4 Portion of Fred
8oz of Self Raising Flour
1tsp of Baking Powder
1tbsp of Sugar
Splash or 6 of milk
2 handfuls of dried fruit Sultanas and Cranberries are good
A generous sprinkle of Cinnamon
1/2 block of marzipan (optional)
Instructions
Preheat the oven to 180 degrees / 160 degrees fan
Place Fred, the Flour, Baking Powder and sugar in a bowl and mix together
Gradually add the milk a splash at a time until all the ingredients are incorporated and the dough has come together
Add the Dried Fruit and kneed into the dough
Kneed the dough for about 5 mins to 'stretch the gluten' in the flour
now place in an oiled bowl and cover with oiled cling film and leave to rise for 1 hour.
After an hour, remove the dough from the bowl, shape into a ball and roll out into a rectangle.
Sprinkle the cinnamon over the rectangle and rub in so that all the dough is covered
Either
Roll up the Dough back into a sausage so it looks like a swiss roll, Chop the sausage into inch size chunks
Take a chunk, roll into a ball in your hand, flatten out into a disk and place a small ball of marzipan in the middle of the disk.
Pull the dough around the Marzipan so it is fully encased and roll around to create a ball.
Place on a oiled baking sheet and flatten to about 2cm thick.
Repeat the process until you have used all the chunks
Brush each flattened ball with beaten egg and sprinkle with sugar.
OR
Roll out the marzipan to a long sausage and lay on one edge of the dough, now roll up the dough into a swissroll
Tuck the ends underneath and place on a baking tray
Brush with beaten egg and sprinkle with sugar
Place in the middle of the oven and bake for approx 20 - 30 mins for chunks and 40 - 50 mins for swissroll.
Keep an eye on them and cover with foil if getting to brown before cooking time is finished.
Times depend on oven and bread should be cooked through before removing from the oven.
Remove from oven, place on a cooling rack and cool
Then enjoy
