Ok so I know that liver is not everyones first idea of the most amazing food, however if you have not tried this then you have not tried liver before. Try it and then decide.
250g lambs liver thinly sliced
1 Red Pepper thinly sliced
1 Carrot thinly sliced
1 Spring onion finely chopped
Thumb sized piece of ginger finely chopped
3 cloves of garlic finely chopped
1tsp corn flour,
1tblsp soy sauce,
1tsp white wine vinegar
Slice the liver into very thin pieces, say around 2cm width, 4cm length, and 0.3cm thick
Mix the salt, white wine vinegar, sugar and soy sauce, stir well. Stir in the liver and leave to marinade for 30 mins
Chop one green pepper into similar pieces to the liver, and 1 good size carrot into slices
Chop a good piece of ginger, one spring onion, and 3 garlic gloves into small pieces
Heat oil in a wok, remove the liver from the marinade and quickly fry the liver until it changes colour and then remove from the wok.
Add the ginger, spring onion and garlic and fry until you can smell them and then add the pepper and carrot. Stir fry for 3 minutes.
Add the cornflour to the marinade and mix well.
Add the marinade cornflour mixture to the wok and as soon as it starts to bubble turn off the wok.
Serve with plain rice, delicious
